Simple Holiday Stuffing
Ingredients
  • 1 (1 pound) loaf sourdough bread, cubed
  • 3/4 cup butter
  • 1 1/2 cups diced onion
  • 1 1/2 cups diced celery
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons poultry seasoning
  • 1 teaspoon ground black pepper
  • 2 cups chicken stock
  • 2 large eggs
  • 2 1/2 tablespoons finely chopped fresh parsley, divided
  • 2 teaspoons chopped fresh rosemary
Instructions
1
Preheat your oven to the desired temperature of 325 degrees Fahrenheit, or 165 degrees Celsius.
2
Arrange bread cubes in a single layer on a flat baking sheet with raised edges to prevent the bread from spreading.
3
Bake the bread cubes in your preheated oven for a period of 10 to 12 minutes, stirring the bread halfway through the cooking time.
4
Remove the bread cubes from the oven and allow them to cool down completely. Then, increase your oven temperature to 350 degrees Fahrenheit, or 175 degrees Celsius.
5
Lightly grease a 9x13-inch baking dish with cooking spray to prevent the bread mixture from sticking.
6
Melt butter in a large skillet over medium-high heat. Add diced onion and celery to the skillet and cook, stirring frequently, until the onion becomes translucent and starts browning, approximately 7 minutes. Stir in salt, poultry seasoning, and pepper to taste.
7
In a separate bowl, whisk together stock, eggs, chopped parsley, and rosemary to create a mixture. Add the cooled bread cubes and onion mixture; stir until everything is well combined.
8
Pour the bread mixture into the prepared baking dish and cover it with aluminum foil to prevent overcooking.
9
Bake the bread mixture in your oven for 45 minutes. Remove the foil and continue baking until it's golden brown and lightly toasted on top, taking an additional 20 to 25 minutes.
10
Garnish the finished dish with any remaining parsley for a fresh and appealing finish.
