- 4 cups sliced onions
- 5 cups beef broth
- 2 tablespoons dry sherry
- 1 teaspoon dried thyme
- 1 pinch salt and pepper to taste
- 4 slices French bread
- 4 slices provolone cheese
- 2 slices Swiss cheese, diced
- 1/4 cup grated Parmesan cheese

Collect all necessary ingredients beforehand.

Melt butter with olive oil in an 8-quart stock pot over medium heat, stirring occasionally to prevent burning. Add sliced onions and gently stir continuously until they become tender and lose their raw appearance, without achieving a brown color.

Add beef broth, sherry, and thyme to the pot, stirring well to combine. Season with salt and pepper according to taste. Allow the mixture to simmer for 30 minutes, stirring occasionally to prevent scorching.

In the meantime, preheat your oven's broiler to a suitable temperature.

Transfer the soup into oven-safe serving bowls, placing one slice of bread on top of each bowl. If desired, break the bread into smaller pieces for easier serving.

Layer a slice of provolone cheese, followed by 1/2 slice diced Swiss and 1 tablespoon Parmesan cheese on top of the bread in each bowl.

Position the bowls on a cookie sheet and place them under the preheated oven's broiler, where they will be exposed to heat for 2-3 minutes or until the cheese bubbles and browns slightly.
