- 1/4 cup panko bread crumbs, or as needed
- 1 cup olive oil for frying, or as needed

Combine garbanzo beans, panko bread crumbs, onion, olive oil, egg, parsley, curry powder, garlic powder, lemon juice, and black pepper in a food processor or blender. Process until the mixture reaches a coarse texture, with some larger pieces remaining.

If the mixture is too wet, add additional panko bread crumbs and continue processing until it reaches the desired consistency.

Spoon the mixture into small, rounded portions, roughly the size of a golf ball. Arrange these on a plate.

Shape each portion into a patty and coat evenly with additional panko bread crumbs.

Heat approximately 1-inch of olive oil in a skillet over medium heat.

Carefully place the patties in the hot skillet and cook until crispy, flipping them over halfway through the cooking time, approximately 3 minutes on each side.
