- 4 potatoes, peeled and quartered
- 1 pound carrots, cut into large chunks
- 1 onion, cut into wedges
- 3 cups water
- 2 tablespoons sugar
- 2 tablespoons cider vinegar
- 3 cloves garlic, minced
- 1/2 teaspoon ground black pepper
- 1 bay leaf
- 1 (3 pound) corned beef brisket with spice packet, cut in half
- 1 small head cabbage, cut into wedges

Add the potatoes, carrots, and onion to a 5-quart slow cooker.

Combine water, sugar, vinegar, garlic, black pepper, bay leaf, and the contents of the spice packet in a small bowl; pour this mixture over the vegetables.

Add the beef brisket and cabbage on top of the vegetables.

Seal the slow cooker and cook on Low for 8 to 9 hours, or until both the beef and vegetables are tender.

Before serving, take out the bay leaf.
