  • 4 1/2 cups all-purpose flour, divided
  • 1/2 cup warm water (100 degrees F or 38 degrees C)
  • 1 (12 fluid ounce) can or bottle beer
  • 1 1/2 teaspoons fine salt

  • 1 tablespoon cornmeal

Combine yeast, half a cup of flour, and warm water in a large mixing container. Place the bowl in a cozy area with good air circulation and let it rest for approximately 30 minutes.

Combine the remaining flour, beer, salt, and yeast mixture in the bowl. Mix until all the ingredients are well incorporated and form a dense, sticky dough that clings to the sides of the bowl. Cover it with a lid and let it rise in a warm spot for two hours, until it has doubled in size.

Remove the dough from the bowl using a rubber spatula and place it on a surface that has been generously dusted with flour. Dust the top of the dough with even more flour and shape it into a loaf form.

Sprinkle a baking sheet with cornmeal for added traction. Carefully transfer the dough to the prepared baking sheet and sprinkle the top with a light dusting of flour. Cover it loosely with a towel and let it rise for 30-40 minutes.

Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).

Place a small container of warm water on the lowest rack in your oven to maintain humidity. Position the baking sheet with the loaf on the middle rack above the pan of warm water in the oven. Bake for 35 minutes, or until the loaf is golden brown.
