  • 1 (14.5 ounce) can whole peeled tomatoes, drained
  • 2 teaspoons curry powder
  • 1/8 teaspoon salt
  • 1 (2 to 3 pound) whole chicken, bones and skin removed, cut into pieces
  • 1 (14 ounce) can unsweetened coconut milk
  • 1 lemon, juiced

Preheat your cooking surface by heating a substantial, thick-walled pan over an intermediate temperature. Introduce the olive oil into the pan and initiate a gentle simmering process. Combine the onion, garlic, and bay leaf within the pan and continue to cook until the onion reaches a light brown hue. Combine the tomatoes, curry powder, and salt in the pan, allowing the mixture to cook for approximately 5 minutes. Introduce the chicken into the pan and continue cooking for about 15 to 20 minutes, or until the chicken is no longer pink and its juices flow freely.
