- 1/2 medium onion, sliced
- 1/4 cup seasoned bread crumbs
- salt and ground black pepper to taste

Preheat your air fryer oven to the high heat setting, which is equivalent to 375 degrees F (or 190 degrees C).

Next, take a handful of potatoes and gently pat them dry using a clean kitchen towel to remove any excess moisture. Transfer the potatoes to a large bowl and mix in beaten eggs, finely chopped onion, some bread crumbs, a pinch of salt, and a few grinds of pepper until well combined.

Before adding the potato mixture to the air fryer, lightly spray the basket with a non-stick cooking spray to prevent sticking. Using a spoon or small scoop, drop 1/4 cupfuls of the potato mixture into the air fryer basket. Repeat this process until all the mixture is used up, then give the top of the air fryer basket a quick spray with non-stick cooking spray.

Finally, cook the potato fritters in the air fryer oven until they are crispy and golden brown on both sides, taking anywhere from 8 to 12 minutes depending on your desired level of doneness.
