Boil a substantial container of water until it reaches its maximum temperature. Prepare a large bowl with ice-cold water and reserve it for later use.

Carve an inverted cross shape on the bottom of each tomato, making this process easier for removal. Submerge tomatoes in boiling water until their outer layer starts to separate, approximately 30 seconds to 1 minute.

Transfer the tomatoes into the bowl of ice water; set it aside for a period of 5 minutes. Remove the tomatoes from the water; use your hands to peel off their outer layer and slice into four pieces.

Transfer the tomatoes into a large saucepan over low heat; add salt to taste. Simmer, stirring occasionally to prevent scorching, until the sauce has thickened slightly, approximately 20 to 30 minutes.
