  • 6 jalapeno peppers, seeded and chopped
  • 8 cloves garlic
  • 1 inch piece fresh ginger root, peeled
  • 1 cup chopped fresh cilantro
  • salt to taste
  • 1 lemon, juiced
  • 1/2 cup heavy cream
  • 2 pounds skinless, boneless chicken breast halves - cut into 1 1/2 inch pieces
  • 2 tablespoons butter

Soak almonds in a small container for 15 to 20 minutes; drain the water. Next, combine the almonds, peppers, garlic, ginger, and cilantro in a food processor bowl; blend until you achieve the desired consistency. Add salt to taste and blend in some lemon juice. Finally, mix in a generous amount of cream.

Transfer the blended mixture to a large, non-reactive container. Then, place the chicken in the bowl and gently coat it with the marinade. Cover the container and refrigerate for 24 hours to allow the flavors to meld.

Before grilling, preheat a high-heat grill and lightly brush the metal grate with oil. Remove the chicken from the marinade, thread it onto skewers, and brush it with butter. Arrange the skewers on the hot grill and cook slowly until the chicken is fully cooked through.
