Ingredients
- 5 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 cups shortening
- 3/4 cup cold water
- 1 egg
- 1 tablespoon vinegar
- 4 cups apples - peeled, cored and chopped
- 2 cups chopped fresh rhubarb
- 2 cups sliced fresh strawberries
- 2 cups fresh blueberries
- 2 cups fresh raspberries
- 2 tablespoons lemon juice
- 2 cups white sugar
- 2/3 cup all-purpose flour
- 2 tablespoons tapioca
- 1 egg yolk, beaten
- 2 tablespoons water
Instructions
1
First, preheat your oven to the optimal temperature for baking, which is 350 degrees F (or 175 degrees C).
2
Next, prepare the dough by combining flour and salt in a large mixing container. Use a pastry blender or your fingertips to break down the shortening into small pieces, resulting in a mixture that resembles coarse crumbs. In a separate bowl, whisk together water, egg, and vinegar until well combined.
3
Then, gradually add the wet ingredients to the flour mixture, stirring until it forms a cohesive ball. Divide this dough into four equal portions and wrap each one in plastic wrap, refrigerating them for at least 4 hours or overnight to allow the dough to rest and relax.
4
After that, roll out each portion of dough to fit two 9-inch pie pans. Gently place the bottom crusts into the prepared pans, then set aside the top crusts for later use.
5
Now, prepare the filling by combining sliced apples, rhubarb, strawberries, blueberries, raspberries, and a squeeze of lemon juice in a large mixing bowl. In another bowl, whisk together sugar, flour, and tapioca to create a dry mixture.
6
Gently fold the dry mixture into the fruit mixture, taking care not to bruise or damage the delicate ingredients. Divide this fruit mixture evenly into two prepared pastry-lined pie pans.
7
Next, cover each pie with a top crust and trim any excess dough from the edges. Use your fingers or a fork to crimp the edges and seal the pies.
8
Finally, whisk together an egg yolk and a little water in a small bowl to create an egg wash. Brush the tops of the pies with this egg wash, then cut a few slits in each pie top to allow steam to escape during baking.
9
Bake the pies in a preheated oven at 350 degrees F (or 175 degrees C) for 50 to 60 minutes, or until the filling is bubbly in the center and the top is golden brown.
