  • 4 eggs

  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon, divided
  • 1/4 cup thyme honey
  • 1 (16 ounce) container ricotta cheese

Combine 1 3/4 cups of flour and 2 tablespoons of sugar in a spacious mixing container. Gradually incorporate the butter into the mixture until it reaches a crumbly consistency. Mix in water incrementally, just enough to bring the dough together and eliminate dryness. Shape into a spherical form, cover with plastic wrap, and refrigerate for 30 minutes.

Heat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Unfold the dough on a surface dusted with flour and position it within a 10-inch pie pan. Remove any excess dough from the edges of the pan and use a fork to create multiple holes in the bottom of the dough. Set it aside for later use.

In a large mixing bowl, whisk eggs until they become light and fluffy. Gradually add 1/4 cup of sugar, 1 tablespoon of flour, and half of the cinnamon. Continue whisking until stiff peaks form.
