Ingredients
- 3 ounces raisins
- 5 tablespoons olive oil
- 1 small onion, minced
- 1 clove garlic, minced
- 1/2 pound ripe tomatoes, diced
- 10 green olives, pitted and minced
- 2 ounces pine nuts
- 1/4 cup capers
- 2 pounds swordfish steaks
- salt and pepper to taste
Instructions
1
Submerge raisins in a gentle stream of warm water for 30 minutes. Discard the liquid and reserve the raisins.
2
Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).
3
Heat a generous amount of olive oil in a large cooking vessel over extremely high heat. Sear the onion and garlic until they become tender. Introduce the raisins, tomatoes, olives, pine nuts, and capers into the mixture. Cover the pan, decrease the heat to a moderate level and cook for 15 minutes.
4
Sprinkle salt and pepper liberally over the steaks. Position them in a lightly coated baking dish and cover with the prepared sauce. Place the baking dish in your preheated oven and cook for 15 to 20 minutes, until the steaks reach a firm consistency.
