Sicilian Stuffed Meat Rolls
Ingredients
  • 2 eggs, beaten
  • 1/2 cup tomato juice
  • 3/4 cup soft bread crumbs
  • 2 tablespoons snipped fresh parsley
  • 1/2 teaspoon dried oregano, crushed
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 clove garlic, minced
  • 2 pounds lean ground beef
  • 1 (6 ounce) package thinly sliced ham
  • 1 (6 ounce) package sliced mozzarella cheese

Combine eggs and tomato juice in a large bowl, stirring until well incorporated. Add bread crumbs, parsley, oregano, salt, pepper, garlic and ground beef to the mixture, blending until everything is fully combined. Preheat your oven to 350 degrees F (175 degrees C).

Next, place the meat on a piece of parchment paper or aluminum foil and shape it into a 10x8 inch rectangle. Arrange the ham slices on top of the meat, leaving about an inch around the edges untouched.

Now, tear the cheese slices into small pieces and sprinkle them over the ham. Reserve one slice of cheese whole, as you'll need it later. Using your hands or a spatula, carefully roll the meat into a tight rectangle, using the parchment paper or foil to help lift it. Press the edges and ends of the meat together tightly, making sure everything stays in place.

Place the rolled-up meat seam-side down into a 9x13 inch baking dish. Put it in the oven and bake for approximately 75 minutes, or until the meat is cooked through.

While the loaf is baking, take the reserved slice of cheese and cut it into four triangular pieces. Arrange these triangles on top of the loaf, overlapping them slightly to create a decorative pattern. Return the loaf to the oven for an additional 2 minutes, or until the cheese is melted and bubbly.
