- salt to taste
- 6 cups water
- 1 tablespoon chopped fresh parsley, or to taste
- ground black pepper to taste
- 1 quart vegetable oil, or as needed

Combine chickpea flour and a pinch of salt in a substantial saucepan over low heat. Gradually add water, stirring constantly to avoid the formation of lumps.

As the mixture becomes smooth and velvety, transition to medium heat and bring it to a rolling boil. Decrease the heat and let it simmer for 15 minutes, stirring persistently, until the mixture starts to detach from the sides of the pan.

Introduce a handful of chopped parsley and a dash of black pepper. Fine-tune the seasoning with salt if necessary.

Pour the chickpea mixture onto a well-greased baking sheet. Evenly spread it to form a 1 1/2 inch thick layer. Allow the mixture to set and harden, at least 30 minutes in the refrigerator.

Cut the chickpea mixture into 1 1/2- x 2-inch squares.

Heat a substantial amount of vegetable oil in a deep pot until it reaches 250 degrees F (120 degrees C). Carefully drop a few squares at a time into the hot oil and deep fry until crispy, 3 to 4 minutes. Drain on paper towels and serve hot
