Ingredients
- 1 (16 ounce) package egg noodles
- 2 tablespoons canola oil
- 2/3 cup dry-roasted peanuts
- 6 tablespoons low-sodium soy sauce
- 2 tablespoons sambal oelek (chile paste)
- 2 teaspoons white sugar
- 5 cloves garlic, peeled
- 1 (1 inch) piece fresh ginger, peeled
- 8 ounces ground pork
- 1/8 teaspoon salt
- 1 1/4 cups cucumber - peeled, seeded, and chopped
- 3/4 cup thinly sliced green onion
- 1/3 cup chopped fresh cilantro
- 3 tablespoons lime juice

Fill a large pot with salted water, making sure to use just the right amount. Place it on high heat and bring the water to a rolling boil. Cook egg noodles in the boiling water until they're just right, still having some bite when you take a bite. This should take around 7 to 9 minutes. Remove the noodles from the water with a colander and pour them into a large bowl, making sure to save 3/4 cup of the cooking liquid for later.

In a large wok, heat some oil over medium-high heat. Add peanuts to the pan and let them cook until they have a lovely aroma, about 2 minutes. Take the wok off the heat and let it cool down a bit. Now, combine the peanuts with soy sauce, sambal oelek, sugar, garlic, and ginger in a mini food chopper. Use the chopper to grind everything together until it's finely ground.

In a wok, cook some pork and salt over medium-high heat until the meat is no longer pink. Use a spoon to break up the meat as it cooks, stirring constantly until it's done. This should take about 8 minutes. Remove the wok from the heat and add the peanut mixture to the pork, stirring well. Add 3/4 cup of the cooking liquid and bring the mixture to a boil. Let it cook for just 1 minute, stirring constantly.

Now, add the pork mixture, cucumber, green onions, cilantro, and lime juice to the noodles in the large bowl. Toss everything together until it's well combined. Your dish is now ready to be served.
