Shrimp Ponchartrain Sauce
Ingredients
  • 1/4 cup butter
  • 8 fresh mushrooms, sliced
  • 8 medium shrimp - peeled and deveined
  • 1/4 cup whipping cream
  • garlic powder to taste
  • black pepper to taste
  • 2 teaspoons Madeira wine

Heat a medium-sized saucepan over medium heat and melt 1 teaspoon of butter. Add sliced mushrooms to the pan and cook until they become tender, stirring occasionally.

Next, add the shrimp to the saucepan with the mushrooms and cook until they turn pink, stirring frequently.

Transfer the cooked mixture to a serving bowl.

Now, take the same saucepan and melt the remaining 1 teaspoon of butter. Gradually pour in a small amount of cream, stirring constantly to avoid lumps.

Add the cooked shrimp and mushroom mixture back into the saucepan with the cream, and season to taste using garlic powder and black pepper.

Reduce heat to its lowest setting and let the mixture simmer for a longer period of time until it thickens, stirring occasionally.

Just before serving, add a splash of Madeira wine to the saucepan and stir gently.
