- 1 tablespoon sesame oil
- 10 ounces dried Japanese udon noodles
- 20 uncooked large shrimp - peeled, deveined, tails left intact
- 1 cup broccoli florets
- 1/4 cup chopped roasted peanuts

Combine peanut butter, soy sauce, black vinegar, sugar, and sesame oil in a small bowl until the ingredients are fully incorporated and the sauce is smooth. \nHeat water to its boiling point in a large vessel, then add udon noodles and cook for 5 minutes. Add shrimp to the pot of boiling water and continue cooking until the shrimp turn pink and become opaque, approximately 3 minutes. \nTurn off the heat source and keep the pot on the burner to maintain a warm temperature. Add broccoli to the pot, cover it with a lid, and let it sit for 2 to 3 minutes. \nRemove the noodle mixture from the pot and transfer it to a large serving container. Pour the prepared sauce over the noodles, stirring to coat them evenly. \nGarnish the dish with peanuts before serving.
