Shrimp Pad Thai

  • 1/4 cup ketchup
  • 1 tablespoon dark sesame oil
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons canola oil
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1 bunch green onions, chopped
  • 1 cup fresh bean sprouts
  • 3 cloves garlic, minced
  • 1/2 cup unsalted dry-roasted peanuts, chopped

First, fill a large pot with water and place it on the stovetop over high heat. Bring the water to a rolling boil, then carefully add your noodles and take the pot off the heat source. Allow the noodles to sit in the boiling water for 15 minutes, or until they have become tender. Once done, carefully pour off the hot water and set the noodles aside.

Next, prepare a separate bowl by combining ketchup, sesame oil, fish sauce, soy sauce, and red pepper flakes in a single container. Set this mixture aside for later use.

Now, heat 1 teaspoon of oil in a large skillet that is designed to prevent food from sticking. Place the skillet over medium-high heat on your stovetop and wait for it to reach a high temperature. Carefully add the shrimp to the skillet and sauté until they become firm and opaque, taking about 3 to 5 minutes. Remove the cooked shrimp from the skillet with a spoon and set them aside.

With the remaining oil still in the skillet, pour eggs into the pan. Use a spatula to gently stir and cook the eggs until they are lightly scrambled, taking about 5 minutes. Add chopped green onions, bean sprouts, and minced garlic to the skillet and cook until fragrant, about 1 minute.

Now it's time to combine all the ingredients in a single dish. Add the cooked noodles, ketchup mixture, and cooked shrimp to the skillet. Stir everything together and cook for an additional 3 minutes, or until all the ingredients are well combined. Finally, sprinkle some chopped peanuts over the top of your dish and serve hot
