- 1/2 cup cognac
- 1/2 cup fat free half-and-half

Melt butter and olive oil in a substantial cooking vessel over a moderately high heat setting. Sear minced garlic and sliced shallots until they develop a light golden color. Introduce the shrimp into the skillet, then sprinkle with salt, pepper, and a pinch of fiery heat from red pepper flakes. Gradually incorporate sun-dried tomatoes into the mixture. Cook, stirring periodically, until the shrimp start to develop a rich brown hue, approximately 5 minutes.

Pour cognac into the skillet. Stir vigorously to dislodge any stubborn brown residue that has accumulated at the bottom of the pan. Continue cooking until a vigorous boil erupts, then gradually decrease the heat to a low simmer. Introduce half-and-half into the mixture and let it gently thicken, around 5 minutes.
