  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon ground red chile pepper
  • 2 pounds fresh medium shrimp, peeled and deveined
  • 3 cups hot cooked rice
  • 9 sprigs fresh parsley

Heat a substantial amount of vegetable oil in a large cooking vessel over medium heat; gradually add flour and continue to cook, stirring frequently, until the mixture reaches a deep, rich brown color, approximately 10 to 15 minutes.

Add the onion, celery, green onion, parsley, and garlic to the hot mixture, stirring gently to avoid splashing; continue cooking until the vegetables are tender and have absorbed the flavors, roughly 5 minutes.

Introduce a liquid ingredient into the pot; pour in the broth. Add a pinch of salt and a few dashes of red chile pepper to enhance the flavor; then let the gumbo simmer, covered, allowing the flavors to meld together, around 15 minutes.

Add the shrimp to the pot and cook until they turn pink and opaque, approximately 3 to 5 minutes.
