Shrimp Chow Mein

  • 2 pounds uncooked medium shrimp, peeled and deveined
  • 1 (14 ounce) can beef consomme
  • 1 cup diced celery
  • 1/2 teaspoon salt
  • 1 (8 ounce) package bean sprouts
  • 1 (4 ounce) can sliced mushrooms, drained
  • 1/3 cup cold water
  • 2 tablespoons cornstarch
  • 2 teaspoons soy sauce
  • 1 teaspoon white sugar

Boil a substantial container of water until it reaches its highest temperature. Introduce chow mein noodles into the boiling water and cook over a moderate heat setting until they are fully cooked but retain some firmness, approximately 4 to 5 minutes. Discard the cooking water and rinse with icy cold water.

Simultaneously, heat a substantial amount of oil in a large cooking vessel over a moderate heat setting. Add sliced onions and stir constantly until they turn golden brown, taking around 5 to 7 minutes. Introduce shrimp into the pot and stir constantly until they change color from their original hue to a bright pink, while the meat becomes opaque, roughly 5 minutes. Add consommé, chopped celery, and a pinch of salt; cook covered for 5 minutes. Introduce bean sprouts and sliced mushrooms into the pot, then bring it to a gentle simmer.

Combine water, cornstarch, soy sauce, and sugar in a small mixing bowl. Add the mixture to the pot and simmer for 5 minutes. Serve the prepared sauce over cooked chow mein noodles.
