- 3 fluid ounces brandy
- 1 quart heavy cream, heated
- 1/2 teaspoon Old Bay Seasoning TM
- 3 dashes hot pepper sauce
- 3 dashes Worcestershire sauce
- 1/2 cup dry sherry

Heat the saucepan over medium heat and melt 3/4 cup of butter, stirring occasionally. Next, add the flour to the saucepan and cook until it loses its raw taste, about 7 minutes. At this point, stir in the seafood stock and season with salt and black pepper to taste. Allow it to simmer for 15 minutes before removing the saucepan from the heat and setting it aside.

Now, melt the remaining 1/4 cup of butter in a large saucepan over medium heat. Add the shrimp shells and onions to the pan, cooking until they become translucent. Then, stir in the tomato paste, paprika, and garlic to create a rich flavor profile. Continue cooking until the mixture turns brown.

Next, add the brandy to the saucepan and ignite it briefly. This will help caramelize the flavors, then simmer until they have reduced and thickened to your liking. Stir in the reserved seafood stock and reduce the heat to a low simmer, allowing it to cook for 45 minutes.

To remove any impurities from the stock mixture, strain it through a fine-mesh sieve or cheesecloth into a bowl. Then, return the mixture to the saucepan and heat it over medium heat until it reaches a gentle simmer. Finally, stir in some cream to add richness and depth.
