Ingredients
- 2 tablespoons olive oil
- 4 cups thinly sliced yellow squash
- 3 cups thinly sliced zucchini
- 1 pound medium shrimp - peeled and deveined
- 1/4 cup fresh lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound dried penne pasta
- 1/2 cup minced fresh chives or green onions
- 1/4 cup freshly grated Parmesan cheese
Instructions
1
Heat a substantial amount of oil in a large cooking vessel over a moderate temperature. Introduce the yellow squash and zucchini into the oil, stirring occasionally, until they have softened to your liking after 10 minutes of cooking. Introduce the shrimp into the mixture and continue to cook for a shorter duration, approximately 3 minutes. Introduce lemon juice, garlic, basil, oregano, salt, and pepper into the mixture, stirring to combine, and continue cooking for a minute or two.
2
In parallel, bring a large container of water to a boiling point. Add penne pasta and cook, stirring occasionally, until it reaches the desired level of doneness, still retaining a slight firmness when bitten into, 8 to 10 minutes. Drain the water and transfer the pasta to a large serving container.
3
Combine the cooked shrimp and sauce over the penne pasta, then sprinkle with chives and Parmesan cheese. Stir to merge the ingredients together.
