Ingredients
- 2 cups water
- 1 (7 ounce) box Spanish yellow rice mix (such as Goya®)
- 3 tablespoons olive oil, divided
- 1/2 cup diced onion
- 1 pound uncooked medium shrimp, peeled and deveined
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 tablespoon sweet and spicy seafood seasoning (such as McCormick®)
- 1/2 cup fresh parsley, or to taste

Heat water in a saucepan until it reaches its boiling point. Introduce the rice mix and 1 tablespoon of olive oil into the saucepan. Allow the water to boil for 1 minute; then, cover the saucepan and decrease the heat. Continue cooking until all the water has been absorbed, taking around 25 minutes.

Heat the remaining olive oil in a skillet over medium-high heat. Add the onion and cook until it's just tender, approximately 2 minutes. Introduce the shrimp, green bell pepper, red bell pepper, and seafood seasoning into the skillet. Cook, stirring occasionally, until the shrimp turn pink, roughly 5 minutes.

Place a mound of rice on each plate. Top this with a portion of the pepper-shrimp mixture and finish by sprinkling a generous amount of parsley over the top.
