  • 4 tablespoons olive oil, divided
  • 3 tablespoons Creole seasoning
  • 1 lemon, juiced
  • 1 tablespoon minced garlic
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika, divided
  • 1/2 teaspoon red pepper flakes
  • 1 pinch salt and ground black pepper
  • 1 red bell pepper, cut into 2-inch pieces
  • 1 yellow bell pepper, cut into 2-inch pieces
  • 1 orange bell pepper, cut into 2-inch pieces
  • 1 1/2 cups cherry tomatoes, halved
  • 1 onion, cut into 2-inch pieces
  • 4 andouille sausages, sliced
  • 1 lemon, cut into wedges
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1/2 teaspoon Creole seasoning
  • 2 tablespoons chopped fresh parsley, or to taste
  • finely chopped green onion, or to taste

Gather all necessary ingredients before commencing the cooking process. Preheat your oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius). Use cooking spray to coat a large sheet pan.

Place the potatoes in a large pot and cover them with salted water; bring the mixture to a boil. Reduce heat to a lower setting and simmer until the potatoes are tender, taking around 10 to 12 minutes.

Add corn kernels to the pot and boil for an additional 5 minutes. Drain the water from the pot.

Cut the corn into smaller, more manageable pieces.

In a separate bowl, combine 3 tablespoons of olive oil, 3 tablespoons of Creole seasoning, the juice from 1 lemon, minced garlic, Italian seasoning, 1/2 teaspoon of paprika, red pepper flakes, salt, and pepper. Mix the ingredients well to create a uniform seasoning blend, then set it aside for later use.

Combine the boiled potatoes and corn with the sliced bell peppers, cherry tomatoes, onion, and sausage slices in a large bowl. Add the seasoning mixture to the potato mixture and mix everything together until it's evenly distributed.

Spread the potato mixture onto a sheet pan in a single layer, making sure to cover the entire surface. Place lemon wedges on all sides of the sheet pan for added flavor.

Meanwhile, combine the shrimp with 1 tablespoon of olive oil, 1/2 teaspoon of paprika, and 1/2 teaspoon of Creole seasoning in a bowl. Allow the shrimp to marinate for a few minutes.

Add the marinated shrimp to the sheet pan with the potato mixture after 8 minutes of baking and mix everything together until it's evenly distributed.

Return the sheet pan to the oven and cook until the shrimp are opaque, taking around 6 to 8 minutes. Remove the lemon wedges from the sheet pan and garnish with parsley and green onions to complete the dish.
