  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon minced fresh garlic
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon fish sauce
  • 1/4 teaspoon dried red pepper flakes
  • 2 tablespoons avocado oil
  • 1 medium red onion, cut into 1-inch chunks
  • 1 medium orange bell pepper, cut into 1-inch chunks
  • 1 medium red bell pepper, cut into 1-inch chunks
  • 4 cups broccoli florets
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons cornstarch
  • 2 tablespoons chopped cashews, or to taste

Prepare 1/4 cup of pineapple juice from the can by scooping it out with a measuring spoon and placing it in a small mixing container. Set the pineapple chunks aside, reserving any extra juice for future use or discarding it.

Combine soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, fish sauce, and pepper flakes in the pineapple juice; stir until everything is fully incorporated. Transfer 1/4 cup of this mixture to a separate small bowl, leaving the rest in the original mixing container.

Heat a 12-inch non-stick skillet over medium heat. Add a small amount of avocado oil to the hot skillet and let it warm up for about 30 seconds. Add sliced red onion and diced bell peppers; cook and stir them for approximately 1 to 2 minutes. Add broccoli florets; cook and stir them for about 1 minute.

Pour the sauce from the mixing container into the skillet, bringing it to a boil. Add shrimp and cook until they change color and start curling up, taking about 2 to 3 minutes.

In the meantime, mix cornstarch into the sauce in the small bowl until there are no lumps. Slowly pour this mixture into the skillet, stirring constantly to avoid any clumps. Add the reserved pineapple chunks.

Continue cooking until the sauce thickens, taking about 1 to 2 minutes. Remove from heat and sprinkle toasted cashews over the top. Serve immediately.
