Ingredients
- 2 tablespoons coconut oil (such as British Class®)
- 1 medium onion, diced
- 1 small carrot, diced
- 2 cloves garlic, minced
- 1/2 cup uncooked medium shrimp, peeled and deveined
- 1/2 cup diced ham
- 4 cups cooked jasmine rice
- 1 tablespoon soy sauce (such as Chinatown)
- salt and ground black pepper to taste
- 1 1/2 cups diced pineapple
- 1 small tomato, diced
- 3 green onions, thinly sliced
Instructions
1
Heat a substantial frying pan over medium-high heat, utilizing coconut oil as the primary ingredient. Introduce the onion, carrot, and garlic into the pan; stir-fry until they become tender and soft, approximately 3 minutes. Next, add the shrimp and ham to the pan; stir-fry until the shrimp are almost fully cooked through, roughly 2 minutes. Introduce the cooked rice and soy sauce to the pan; continue cooking and stirring for 1 minute, allowing all ingredients to meld together. Add a pinch of salt and pepper to enhance the flavors.
