Ingredients
- 1 cup stone-ground grits
- 2 cups shredded sharp Cheddar cheese
- 3 tablespoons butter
- salt and ground black pepper to taste
- 1 pound shrimp, peeled and deveined
- 6 slices bacon, chopped
- 1 cup thinly sliced scallions
- 2 tablespoons chopped fresh parsley
- 1 large clove garlic, minced
- 4 teaspoons lemon juice

Prepare the grits by following the package instructions until they reach a tender consistency.

Remove the cooked grits from the heat source and set them aside.

Next, prepare the shrimp by rinsing them under cold water and gently patting them dry with a paper towel.

In a large skillet, cook the bacon over medium-high heat, stirring occasionally, until it reaches an evenly browned state, approximately 10 minutes.

Drain the cooked bacon on paper towels and reserve the remaining grease in the skillet.

In the same skillet, cook the shrimp over medium heat until they start to turn opaque and change color, roughly 2 minutes.

Add the cooked bacon, chopped scallions, fresh parsley, minced garlic, and a squeeze of lemon juice to the skillet.

Continue cooking until the shrimp have turned bright pink, approximately 3 minutes more.

Spoon the cooked grits into a serving bowl and combine them with the shrimp mixture.
