- 4 cups hot water
- 2 cups chopped celery
- 1 bunch green onions, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 large tomato, chopped
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 2 pounds shrimp, peeled and deveined
- 8 hard-cooked eggs
- 1 cup okra
- salt to taste
- ground black pepper to taste
- 1/4 tablespoon cayenne pepper
- 3 cups cooked white rice

Preheat your cooking vessel by heating oil in a sturdy pot with a heavy bottom. Next, combine the flour and heat it to create a rich paste. Continuously stir the mixture until it reaches a deep, dark brown color; be cautious not to overcook and risk burning the mixture.

Add sliced onions and minced garlic, then cook until they start to soften slightly. Now, whisk in water to create a smooth consistency.

Introduce the remaining ingredients: chopped celery, scallions, diced tomatoes, green and red peppers, okra, a bay leaf, thyme, salt, pepper, and cayenne. Let the mixture simmer for 1 hour.

Add cooked shrimp and hard-boiled eggs to the pot, then continue to cook for an additional 15-20 minutes. Finally, season your gumbo according to your preference and serve it over a bed of rice.
