Sheet Pan Sriracha Fried Rice
Ingredients
  • 1/2 cup diced onion
  • 1/2 cup diced carrot
  • 1 1/2 tablespoons canola oil
  • 5 cups cooked and cooled rice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 3/4 cup frozen peas
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 4 large eggs
  • 2 medium green onions, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon Sriracha
  • 2 teaspoons rice vinegar

Position the oven rack in the center of your oven and set the broiler to its highest setting.

Prepare the fried rice by sautéing the onion and carrot in oil on a rimmed baking sheet until they are evenly coated; arrange them in a single layer.

Place the prepared mixture under the broiler for 5 minutes, allowing it to develop a golden crust.

Add cooked rice, salt, and pepper to the baking sheet and toss everything together until the rice is well coated. Continue to cook under the broiler, stirring occasionally, until the rice reaches a light golden color, approximately 8 to 10 minutes.

Add frozen peas, minced garlic, and soy sauce to the rice mixture; toss everything together until it is evenly coated. Spread the mixture out in an even layer and use a spoon to create four small depressions in the rice. Crack one egg into each depression.

Place the baking sheet under the broiler again and cook until the egg whites are set, around 3 minutes.

Meanwhile, prepare the Sriracha mayo by mixing together mayonnaise, Sriracha sauce, and rice vinegar in a small bowl until well combined.

Drizzle the prepared Sriracha mayo over the fried rice and sprinkle with chopped green onions.
