Sheet Pan Sausage and Veggies
Ingredients
  • 1 large head broccoli, cut into florets
  • 10 ounces baby potatoes, halved
  • 1 large carrot, sliced
  • 1/2 red onion, roughly chopped
  • 3 tablespoons olive oil
  • 2 tablespoons whole grain mustard
  • 2 tablespoons grated Pecorino Romano cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • salt and ground black pepper to taste
  • 4 mild Italian sausage links
Instructions
1
Preheat your oven to its highest temperature setting, which is 400 degrees Fahrenheit or 200 degrees Celsius.
2
Take a large container and add the broccoli, baby potatoes, carrot, and onion. Drizzle a generous amount of olive oil over them, followed by the addition of mustard, Pecorino Romano cheese, thyme, oregano, salt, and pepper. Mix everything together until the vegetables are evenly coated.
3
Arrange the mixed vegetables in a single layer on a large baking sheet. Place the sausages on top, making sure they touch the bottom of the pan and are nestled among the vegetables.
4
Put the prepared baking sheet in the preheated oven and bake for 30 to 35 minutes, or until the sausages are cooked through and no longer pink in the center. To check for doneness, insert an instant-read thermometer into the thickest part of a sausage and verify that it reaches 160 degrees Fahrenheit or 70 degrees Celsius.
