Ingredients
- 4 skinless, boneless chicken breast halves
- 1 1/2 pounds yellow potatoes, cubed
- 2 medium red bell peppers, seeded and chopped
- 1/2 cup coarsely chopped red onion
- 2 teaspoons minced garlic
- 2 tablespoons olive oil
- 2 medium lemons, cut into wedges
- 1 tablespoon dried oregano
- freshly cracked salt and pepper to taste
- 1/2 cup pitted Kalamata olives
Instructions
1
Preheat the oven to a high temperature, specifically 400 degrees F (200 degrees C), to ensure optimal cooking results.
2
Combine the chicken, potatoes, bell peppers, onion, and garlic in a large bowl, mixing everything together until it is thoroughly incorporated. Transfer the mixture to a large sheet pan and arrange it in an even layer.
3
Squeeze fresh lemon juice over the top of the mixture, then place the used lemon wedges on the sheet pan. Sprinkle dried oregano over the top, followed by a pinch of salt and pepper to bring out the flavors. Add some Kalamata olives for added depth.
4
Bake the mixture in the preheated oven until the potatoes are tender enough to be pierced with a fork and the chicken breasts have reached an internal temperature of at least 165 degrees F (74 degrees C), about 25 minutes.
