Ingredients
- 2 cloves garlic, minced
- 1 tablespoon minced fresh ginger root
- 1/4 cup soy sauce
- 3 tablespoons rice vinegar
- 1/4 cup peanut oil
- 3 tablespoons sesame oil
- 1 dash hot pepper sauce
- 1/2 green bell pepper, julienned
- 1/2 red bell pepper, julienned
- 1/2 yellow bell pepper, julienned
- 4 green onions, minced
- 2 cups diagonally sliced snap peas
- 2 tablespoons sesame seeds, toasted
- 1 (7 ounce) package fresh udon noodles

Combine garlic, ginger, soy sauce, rice vinegar, peanut oil, sesame oil, and hot pepper sauce in a sealed container. Intensely mix the ingredients together by shaking the container vigorously until they are well combined. Allow the flavors to mingle and blend with each other.

Fill a large pot with water and bring it to a rolling boil. Add udon noodles, and cook them until they are soft and tender, approximately 3 minutes. Drain the cooked noodles, and place them in a serving dish.

In a microwave-safe container, combine sliced bell peppers with chopped green onion and frozen peas. Heat the mixture in the microwave until it is warm, but still retains some crunch. Add the heated vegetables to the serving dish containing the noodles, and pour the dressing over all of it. Mix everything together so that the dressing is evenly distributed, then sprinkle toasted sesame seeds on top for added flavor and texture.
