  • 1/2 medium poblano pepper, sliced
  • 3 stalks green onions, white parts only, chopped
  • 1/2 cup snow peas
  • 4 mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon minced fresh ginger root
  • 1/4 cup brown sugar
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon chile paste
  • 1/2 tablespoon Sriracha sauce
  • 1 tablespoon toasted sesame seeds

Prepare the chicken by sprinkling it with a blend of spices that typically includes cinnamon, cloves, fennel seeds, star anise, and Szechuan peppercorns.

Heat a neutral-tasting oil with a high smoke point, such as canola or peanut oil, in a well-seasoned skillet over medium-high heat. Add the chicken and cook constantly until it develops a rich brown color on all sides and reaches an internal temperature of 165 degrees Fahrenheit, approximately 7 to 10 minutes. Remove the chicken from the skillet and cut it into small, manageable pieces.

Meanwhile, fill a large container with water that has been lightly salted and bring it to a rolling boil. Cook egg noodles at a boil until they are tender but still retain some firmness when bitten into, 7 to 9 minutes. Drain the noodles and set them aside.
