Sesame Bok Choy Rice

  • 1 large head bok choy
  • 1 1/2 cups cold water
  • 1 cup long grain rice
  • 1 teaspoon soy sauce
  • 1 teaspoon chili-garlic sauce (such as sambal)
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon toasted sesame seeds

Begin by detaching the bok choy leaves from their stems, and then cut the stems into 1-inch sized pieces. Next, chop the leaves into smaller portions.

In a pot, combine water, rice, and soy sauce. Heat the mixture over medium heat until it starts to boil, then add the chopped bok choy stems and stir well. After that, reduce the heat to a low setting and cover the pot with a lid.

To finish cooking the rice, let it simmer for about 18 minutes or until it is almost cooked through. During this time, the bok choy stems will start to soften.

Once the rice is almost cooked through, remove it from the heat and stir in the chopped bok choy leaves, chili-garlic sauce, and sesame oil using a fork. This will help to distribute the flavors evenly.

Next, cover the pot with a lid again and let it sit for about 5 minutes more. This will allow the bok choy leaves to wilt and the rice to become fully cooked.
