Ingredients
- 1/2 cup soy sauce
- 1/2 cup white sugar
- 1/3 cup rice wine vinegar
- 1/3 cup minced garlic
- 1 tablespoon sesame seeds
- 1 pound round steak, thinly sliced
- 1/4 cup peanut oil
- 2 cups 1-inch sliced asparagus
- 1 cup sliced fresh mushrooms, or more to taste
- 1 sweet onion, chopped
- 1 red bell pepper, sliced
- 1 bunch green onions, chopped into 1-inch pieces
- 1 cup whole cashews
- 1 tablespoon sesame seeds
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 tablespoon sesame seeds
Instructions
1
Combine soy sauce, sugar, rice wine vinegar, garlic, and 1 tablespoon sesame seeds in a bowl; pour the mixture into a resealable plastic bag. Add beef, ensuring it is fully coated with the marinade, then remove as much air as possible from the bag before sealing it. Refrigerate the beef overnight to allow the flavors to penetrate.
2
In a wok or large skillet, heat peanut oil over medium-high heat. Cook and stir the beef along with its marinade until it reaches a rich brown color, approximately 5 minutes. Introduce asparagus, mushrooms, onion, bell pepper, and green onions into the pan; continue stirring until these vegetables start to soften, taking around 3 to 4 minutes. Add cashews and the remaining 1 tablespoon sesame seeds; cook for an additional 2 to 3 minutes, or until the vegetables are tender.
3
In a separate small bowl, mix cornstarch and water to create a slurry. Stir this mixture into the beef stir fry, allowing it to thicken and coat the ingredients evenly, taking roughly 3 minutes. Finally, sprinkle with the remaining 1 tablespoon sesame seeds.
