Ingredients
- 2 whole (10 ounce) trout, pan-dressed
- salt and pepper to taste
- 1/4 cup all-purpose flour
- 4 tablespoons butter
- 1/2 cup blanched slivered almonds
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh parsley, for garnish
- 8 slices lemon, for garnish
Instructions
1
Begin by thoroughly cleaning the trout under cold running water, then gently pat it dry with paper towels to remove excess moisture.
2
Next, sprinkle a pinch of salt and pepper inside the trout's cavity to enhance its flavor. On the outside, sprinkle a similar amount of salt and pepper to taste.
3
Then, lightly dust the trout with flour, making sure it's evenly coated.
4
In a large skillet, melt 2 tablespoons of butter over high heat until it reaches its melting point. Carefully place the trout in the skillet and sear both sides until they're nicely browned.
5
Downgrade the heat to medium and continue cooking the trout for approximately 5 minutes on each side, or until it's cooked through. Transfer the trout to a serving plate and keep it warm.
6
Next, thoroughly clean out the skillet with paper towels to remove any remaining residue. Melt an additional 2 tablespoons of butter over medium heat until it starts to turn a light golden color.
7
Add the almonds to the skillet and continue cooking them until they're nicely browned.
8
Then, pour in the prepared sauce over the fish and sprinkle it with a squeeze of fresh lemon juice and some chopped parsley. Finally, garnish the dish with slices of fresh lemon for a pop of color and added flavor.
