Seared Scallops with Spicy Jalapeño Vinaigrette
Ingredients
  • 1 large jalapeno pepper, seeded and membranes removed
  • 1/4 cup rice vinegar
  • 1/4 cup olive oil
  • 1/4 teaspoon Dijon mustard
  • salt and freshly ground black pepper to taste
  • 12 large fresh sea scallops
  • 1 pinch sea salt
  • 1 pinch cayenne pepper
  • 1 tablespoon vegetable oil
  • 2 oranges, peeled and cut in between sections as segments

Combine the diced jalapeño, rice vinegar, olive oil, and Dijon mustard in a high-speed blender. Blend the mixture on maximum speed until it reaches a smooth, uniform consistency, approximately 1 to 2 minutes. Add a pinch of salt and a few grinds of black pepper to enhance the flavor.

Next, prepare the scallops by sprinkling a light dusting of flaky sea salt and a pinch of cayenne pepper over them. In a large skillet, heat a generous amount of vegetable oil over extremely high heat until it reaches its smoking point. Gently place the scallops into the skillet and sear them for 2 to 3 minutes on each side, or until they develop a rich brown color. Remove the scallops from the skillet and transfer them to a serving plate.

To finish, garnish the scallops with juicy orange segments and drizzle the spicy jalapeño vinaigrette over the top.
