Heat oil in a 12-inch non-stick skillet over medium heat until it reaches a smooth, shimmering consistency. Carefully place the pork chops into the skillet and sear until they develop a rich brown color on both sides, approximately 4 minutes. Resist the temptation to disturb the chops during this time.
