Seafood-Stuffed Salmon with Lemon Glaze
Ingredients
  • cooking spray
  • 2 small lemons
  • 1 tablespoon salted butter
  • 1/2 medium onion, diced
  • 2 cloves garlic, diced
  • 1/2 pound crabmeat, coarsely chopped
  • 1/2 pound lobster meat, chopped
  • 6 ounces goat cheese, crumbled
  • 2 (8 ounce) salmon fillets
  • 2 tablespoons barbecue sauce, or to taste
  • salt and ground black pepper to taste
Instructions
1
Begin by preheating your oven to a hot temperature of 350 degrees Fahrenheit, or equivalently, 175 degrees Celsius. Next, take a moment to prepare your baking dish by spraying it with cooking spray for non-stick purposes.
2
While you're waiting for the oven to heat up, take a moment to juice two lemons and slice one of them. Set the sliced lemon aside for later use.
3
Melt a portion of butter in a medium-sized skillet over a moderate heat setting. Add sliced onions and minced garlic to the skillet, and cook until they turn golden brown, a process that should take around 7-8 minutes. Remove the skillet from the heat source.
4
Take a food processor and chop up the crab and lobster into smaller pieces. Transfer these chopped seafood items to a bowl, where you can then mix them with the previously cooked onion and garlic mixture, crumbled goat cheese, and freshly squeezed lemon juice.
5
Take each salmon piece and cut it in half. Using your hands, gently fold the crab and lobster mixture into each salmon piece, making sure to seal it tightly with kitchen string.
6
Place the prepared salmon pieces in the baking dish you've been preparing, and top each piece with a slice of lemon. Cover the salmon pieces with barbecue sauce for added flavor.
7
Cover the baking dish with a lid, and place it in the preheated oven for 45 minutes. Remove the lid after 45 minutes, and continue baking until the fish flakes easily with a fork, which should take an additional 15 minutes.
8
Once you've completed the final baking step, remove the dish from the oven and let it cool for a few minutes before serving.
