Seafood Pasta Italiano
Ingredients
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 1/2 tablespoons crushed red pepper
  • 1 1/2 cups Chardonnay white wine
  • 1 cup clam juice
  • 6 cups marinara sauce
  • 8 leaves fresh basil, coarsely chopped
  • 1 pinch salt
  • 1 (16 ounce) package linguine pasta
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1/3 pound scallops
  • 3 whole lobster tails, shelled, cleaned, and chopped
  • 24 mussels, cleaned and debearded
  • 24 littleneck clams, scrubbed
  • 1 tablespoon chopped fresh parsley, or to taste
  • 2 tablespoons grated Parmesan cheese, or to taste
Instructions
1
Heat a substantial amount of olive oil in a large cooking vessel over an intermediate temperature. Introduce minced garlic and crushed red pepper into the pan; allow them to cook for a brief period, approximately 30-40 seconds. Next, pour in white wine and increase the heat to a higher level. Permit the wine to evaporate by half, taking around 8 minutes.
2
Subsequently, introduce a substantial amount of clam juice into the pan and decrease the heat to a lower level. Pour in marinara sauce, fresh basil leaves, and salt; allow the mixture to simmer and blend flavors together, taking roughly 20 minutes.
3
Concurrently, bring a large container of salted water to a boiling point. Cook linguine in the boiling water until it reaches an optimal level of tenderness yet still retains a slight firmness to the bite, approximately 11 minutes. Drain and set aside for later use.
4
Add a variety of seafood items - shrimp, scallops, lobster, mussels, and clams - to the sauce; cook until the seafood items open up and reach their respective culinary stages, approximately 8-10 minutes.
5
Combine cooked linguine with the seafood and sauce; toss until the noodles are adequately coated with a relatively thin yet satisfying sauce, roughly 3 minutes.
6
Present the linguine on a plate and generously load it with seafood and sauce. Garnish with fresh parsley leaves, and serve immediately alongside Parmesan cheese.
