Seafood Enchiladas with Shrimp and Crab
Ingredients
  • 12 (12 inch) flour tortillas
  • 8 ounces Monterey Jack cheese, shredded
  • 1 (6 ounce) can crab meat, drained
  • 1 pound cooked medium shrimp, shelled and deveined
  • 1 (20 ounce) can green enchilada sauce
  • 1 (8 ounce) container sour cream
  • 1 bunch green onions, chopped
Instructions
1
Preheat your oven to a temperature of 350 degrees Fahrenheit (or 175 degrees Celsius). This will ensure that your oven is at the right heat for cooking.
2
Place a stack of tortillas on a flat, stable surface. In the center of each tortilla, create an equal balance of ingredients by placing a specific amount of cheese, crab, and shrimp. Set aside some additional cheese to sprinkle on top of the tortillas later.
3
Roll each tortilla into a compact, cylindrical shape to form enchiladas. Arrange these rolled tortillas side by side in a 9x13 inch baking pan to create a neat and organized layer.
4
Pour an adequate amount of green enchilada sauce over all the rolled tortillas, making sure that every single one is fully coated. Then, sprinkle the remaining cheese over the top of the enchiladas to add an extra layer of flavor.
5
Cover the baking pan with a lid or aluminum foil, and place it in the preheated oven for 30 minutes. After this initial period of cooking, remove the cover and continue baking for an additional 15 minutes.
6
Once the enchiladas are done, remove them from the oven and top each one with a dollop of sour cream. Finally, garnish with chopped green onions to complete the dish and make it visually appealing.
