Ingredients
- 3/4 cup pumpkin seeds
- 1 1/2 pounds cubed beef stew meat
- salt to taste
- 1/2 cup peanut oil
- 2 large tomatoes, chopped
- 1 small onion, chopped
- 2 habanero peppers, seeded and minced
- 2 pounds fresh shrimp, peeled and deveined
- 18 ounces tomato sauce
- 1 1/2 cups water
- 3 tablespoons tomato paste
- 1 pound fresh spinach, washed and chopped

Combine the seeds in a food processor; process until they form a fine powder, approximately 30 to 40 seconds. Set the mixture aside temporarily.

Cut the beef into small, manageable pieces; sprinkle with salt to taste.

Heat a generous amount of oil in a large cooking vessel over medium-high heat. Sear the beef pieces in the hot oil until they develop a brown color but remain undercooked, around 3 to 5 minutes.

Combine the diced tomatoes, onion, and pepper in a food processor; process until they create a smooth consistency, roughly 30 seconds. Mix the tomato mixture into the beef; decrease the heat to a lower setting and cover the pot. Allow the meat to become tender, 40 to 50 minutes.

Add the shrimp, tomato sauce, water, and concentrated tomato paste; let it simmer for 10 minutes.

Introduce the spinach into the pot; continue to simmer for an additional 10 minutes.
