  • 8 medium red potatoes, scrubbed
  • 1 pound clams in shell, scrubbed
  • 1 pound mussels, cleaned and debearded
  • 1/2 pound unpeeled large shrimp
  • 1 (48 fluid ounce) can chicken broth
  • 1/4 cup dry vermouth
  • 1 1/2 cups butter, divided
  • 1 loaf French bread

Begin by placing a single potato at the bottom of a large cooking vessel, covering it with a layer of clams followed by mussels and then shrimp. Next, pour in the vermouth and add an adequate amount of chicken broth to fill the pot halfway. The exact quantity of broth required will depend on the size of your cooking vessel, so adjust accordingly.

Cut a half cup of butter into small cubes and place them on top of the seafood mixture. Cover the pot with a lid, then seal it tightly using aluminum foil to trap the flavors and heat.

Now, bring the mixture to a rolling boil before reducing the heat to medium-low and letting it simmer for 45 minutes. Remove the pot from the heat source, carefully remove the foil and lid, and lift out the seafood and potatoes from the liquid. Arrange them on a large serving platter in a family-style setting.

To serve, melt 1/2 cup of the reserved butter and portion it into individual serving dishes. Accompany these with French bread for dipping, along with any remaining softened butter that may be available for the bread.
