  • 3/4 cup semisweet chocolate chips
  • 2/3 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon sea salt, or as needed

First, preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius). Next, prepare the baking surfaces by lining two large trays with parchment paper and giving them a light spray of non-stick cooking spray.

In a separate bowl, whisk together the flour, cocoa powder, baking powder, and 1/2 teaspoon of sea salt to create a dry mixture.

In a saucepan, gently heat the butter over low heat until it's fully melted and reaches your desired consistency, taking around 3 to 5 minutes. Then, add the chocolate chips and stir until they're completely incorporated into the melted butter.

Meanwhile, in a separate bowl, use an electric mixer to cream together the brown sugar, white sugar, eggs, and vanilla until you achieve a smooth consistency. Gradually pour in a small amount of the melted chocolate mixture and mix until well combined. Be cautious not to add too much, as this may cause the eggs to curdle.

Slowly pour in the remaining chocolate mixture while continuously stirring to avoid any lumps or curdling. Finally, fold in the dry mixture until just combined; be careful not to overmix.

Scoop six large portions of batter onto each prepared baking sheet, leaving about 2 inches of space between them.

Place the baking sheets in the preheated oven and bake until the cookies have spread, flattened to a diameter of 4 1/2 inches or larger, and the tops are crinkled and puffed. This should take around 12 to 14 minutes.

Remove the baking sheets from the oven and transfer them to a wire rack. Immediately sprinkle the cookies with sea salt before they have a chance to cool.
