- 1/2 cup superfine sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground ginger
- 3/4 teaspoon ground allspice
- 1/2 teaspoon salt
- 3 cups unbleached all-purpose flour
- 1 cup butter, softened

Preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Take a medium-sized bowl and mix together the sugar, cinnamon, cardamom, ginger, allspice, and salt until well combined. Divide this mixture into two equal portions and set one aside. In the other half, combine the flour and butter, stirring until they blend together seamlessly.

Then, press the dough evenly into an 8-inch square baking pan. Using a sharp knife, cut it into small, uniform pieces along the 1x2 inch dimensions. To prevent warping during baking, use a fork to prick the shortbread pieces all over.

Next, sprinkle the reserved sugar and spice mixture generously over the top of the shortbread, making sure to brush it into every nook and cranny.

Place the shortbread in a preheated oven at 350 degrees Fahrenheit (175 degrees Celsius) for 25 to 30 minutes, or until it feels firm and golden around the edges. Avoid letting it brown excessively.
