Combine diced potatoes and milk in a saucepan, then place it over high heat to bring the mixture to a rolling boil. Once boiling, decrease the heat and let it gently simmer for approximately 30 minutes, or until the potatoes reach a tender state.

During this time, melt butter in a separate skillet over medium-high heat. Once the butter has melted, add sliced onions to the skillet and cook until they become soft and translucent.

Once the potatoes have reached a tender state, mix them with the sautéed onions and diced corned beef. Continue to cook for an additional 10 minutes, or until the ingredients are heated through and the flavors have melded together. Finally, season with salt and pepper to taste.
