Ingredients
- 2 quarts water
- 1/4 cup coarse salt
- 1/3 cup white sugar
- 5 sprigs dill
- 2 pounds medium shrimp, with shells
- 2 tablespoons vegetable oil
- 1 tablespoon white wine vinegar
- 1 tablespoon minced dill
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

Heat a large pot filled with water to its highest temperature over high heat. Introduce salt, sugar, and dill sprigs into the pot; stir until the sugar has fully incorporated. Add the shrimp to the mixture and cook for 3-4 minutes, or until their shells have turned pink and the meat is no longer see-through.

Remove the shrimp from the pot using a strainer, discarding the dill sprigs in the process. Allow the shrimp to cool down completely in the refrigerator, taking approximately 30 minutes.

Once cooled, remove the shells from the shrimp and set them aside to discard. Combine oil, vinegar, minced dill, salt, and pepper in a bowl; toss the shrimp meat with this mixture to coat it evenly. Cover the bowl and refrigerate overnight, allowing the flavors to meld together. Serve chilled, garnished with fresh dill sprigs.
