Ingredients
- 1 pound dried great Northern beans, soaked overnight
- 1 teaspoon canola oil
- 1 large onion, chopped
- 1/2 pound bacon, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 pinch red pepper flakes
- 1/4 cup pure maple syrup
- 1/4 cup tomato puree
- 2 tablespoons Worcestershire sauce
- 1 tablespoon mustard powder
- 1 ham bone with some meat
- 3 cups boiling water, or as needed
- 1 bay leaf
- 1 1/2 tablespoons apple cider vinegar
- 1 dash hot pepper sauce, or to taste
- salt and pepper to taste
Instructions
1
Preheat your stove to a medium-high heat level, then place a generous amount of oil in a large, deep pan. Once the oil is hot, add sliced onions and crispy bacon bits to the pan, stirring occasionally until they're tender and golden brown, approximately 5 minutes have passed.
2
Next, add minced garlic, dried thyme sprigs, and a pinch of red pepper flakes to the pan, stirring rapidly for 1 minute to allow the flavors to meld together.
3
In a separate container, combine cooked beans with the sautéed onion and bacon mixture, sweet maple syrup, rich tomato puree, savory Worcestershire sauce, and aromatic mustard powder. Place a ham bone in the center of the bean mixture, then pour enough boiling water over the beans to cover them completely. Finally, add a few dried bay leaves on top of the slow cooker.
4
Transfer the bean mixture to a 3 1/2-quart or larger capacity slow cooker, then cover it with a lid and cook for 5 hours on High heat setting, or 10 to 11 hours on Low heat setting.
5
Once the cooking time has elapsed, carefully remove a bay leaf from the slow cooker and season the bean mixture with a splash of vinegar, a few dashes of hot sauce, salt, and pepper before serving.
