- 12 cups water
- 1 cup chopped fresh parsley
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- 2 bay leaves
- salt and ground black pepper to taste
- 1/4 cup soy sauce
- 3 teaspoons liquid smoke
- 1 teaspoon vegan Worcestershire sauce

Heat the large nonstick soup pot over medium heat and sauté the onion for 5 minutes. Next, add the chopped celery, carrots, leeks, and garlic to the pot and continue cooking for another 10 minutes.

Now, add water, fresh parsley, thyme, oregano, and bay leaves to the pot. Season with salt and pepper to taste.

Bring the mixture to a boil, then reduce the heat to medium-low and let it simmer for 30 minutes.

In a separate step, combine the soy sauce, liquid smoke, and vegan Worcestershire sauce in a small bowl.

After 30 minutes of simmering, add the soy sauce mixture to the pot and continue cooking for an additional 1 hour.

Finally, use a slotted spoon to carefully remove the cooked vegetables and bay leaves from the pot, discarding them as you go.
